Thai Basil Beef

Ingredients (2 servings)

  • 1 lb (16 oz) 93% lean ground beef
  • 2 eggs
  • ~1/2 cup green beans, finely chopped
  • 4–5 cloves garlic, minced
  • 2–3 Thai chilies, finely chopped
  • 1 shallot, finely chopped
  • Handful of basil (Thai basil preferred, but regular works)

Sauce (less salty)

  • 1 oz oyster sauce
  • 0.75 oz soy sauce
  • 0.5 oz fish sauce
  • 0.5 oz sugar
  • Small splash of dark soy sauce

Instructions

  1. Finely chop the green beans, garlic, shallot, and Thai chilies. (Traditionally, garlic and chilies are mashed in a mortar and pestle, but chopping works well.)
  2. Mix all sauce ingredients together and set aside.
  3. Heat a pan with a little oil. Add shallot, garlic, and chilies; cook until fragrant,about 30 seconds to 1 minute.
  4. Add ground beef, breaking it apart. Cook until fully browned.
  5. Add green beans and cook for a couple of minutes.
  6. When the beef is nearly done, add the sauce and basil. Mix well.

Serve over rice with a fried egg on top. Quick and flavorful noodles tossed with our signature chili oil, garlic, and fresh herbs.

Bò Bía (Fresh Vietnamese Spring Rolls)

Ingredients

  • 3 Chinese sausages
  • 3 cloves garlic, minced
  • 1/4 cup dried shrimp
  • 15 oz jicama, julienned
  • 1 large carrot, shredded
  • 1 tbsp soy sauce
  • 1/4 tsp sesame oil
  • 2 eggs
  • 1/4 tsp salt
  • 1/4 cup Thai basil
  • 1 package rice paper

Vietnamese Peanut Sauce

  • 2 cloves garlic, minced
  • 1/4 cup hoisin sauce
  • 1 tbsp peanut butter
  • 1 cup water
  • 1 tsp cornstarch
  • 1 tbsp peanuts, toasted and chopped (optional)

Bò Lúc Lắc (Vietnamese Shaking Beef)

Ingredients

  • 1 lb beef (ribeye preferred; NY strip also works)
  • 1 tbsp oil
  • 1 1/2 tbsp oyster sauce
  • 2 tbsp soy sauce (low sodium preferred)
  • 1 tsp sweetener (coconut sugar, monk fruit, or white sugar)
  • 1 tbsp garlic, minced
  • 1 tsp black pepper
  • 1 tbsp unsalted butter
  • Oil, for cooking

Instructions

  1. Cut beef into 1-inch cubes.
  2. In a bowl, marinate beef with oyster sauce, soy sauce, sweetener, garlic, and black pepper. Let sit for at least 10 minutes (at room temp if short marinating).
  3. Heat oil in a wok or skillet over high heat. Once hot, add beef and spread into an even layer. Let cook undisturbed for 1 minute.
  4. Shake or stir the pan to flip the beef, then cook another 1 minute undisturbed.
  5. Add butter and toss until melted and coating the beef.
  6. Serve with rice, noodles, or vegetables.

Serving Suggestions

Cucumbers, tomatoes, thinly sliced red onion, a sunny-side-up egg, scallion oil, and a salt + pepper + lime dipping sauce.
